I spent time there as a Stagier because I had time between Jobs. Stagier means you work for free.
I worked on the Entermetier station and Saucier Station.
It was a new opening and we go a star first year of opening
I was the Saucier we were basically 4 ppl in the kitchen and we cooked 2 restaurants 1 Steak house and 1 fine dining restaurant
I was involved in every part of operation
Our Company was 200 Soldiers and I led a team of 4 Guys to cook all meals for them 7 days a week.
Here I learned all my basics we were a team of 5 ppl in the Kitchen which made me see everything from scratch.
